Instructions
Prepare the Burger Patties:
1. Preheat your grill or grill pan to medium-high heat.
2. In a large bowl, gently mix the ground beef with salt and pepper to taste. Be careful not to overmix.
3. Form the mixture into 6 evenly sized patties.
4. Lightly brush each patty with olive oil to prevent sticking.
Prepare the Toppings:
1. In a frying pan over medium heat, cook the bacon slices until they are crispy. Transfer to a paper towel to drain the excess fat.
2. Peel and pit the avocado. Slice it into thin pieces and set aside.
3. In a separate pan, season the shrimp with 1 tablespoon of Old Bay seasoning. Cook over medium heat for 2-3 minutes on each side or until the shrimp are pink and cooked through.
Prepare the Sauce:
1. In a small bowl, combine mayonnaise, lime juice, and 1 teaspoon Old Bay seasoning. Mix well and season with salt to taste.
Grill the Burgers:
1. Place the prepared beef patties on the hot grill or grill pan.
2. Cook for about 4 minutes on one side before flipping.
3. After flipping, place a slice of pepper jack cheese on each patty.
4. Continue cooking for another 4 minutes for medium doneness, or until your desired level of doneness is reached.
Assemble the Burgers:
1. Toast the hamburger buns on the grill for about 1 minute or until they have nice grill marks.
2. Spread the Old Bay-lime mayo sauce on the bottom half of each toasted bun.
3. Place a lettuce leaf and a tomato slice on the sauce, if using.
4. Add the grilled beef patty with melted pepper jack cheese.
5. Top with 2-3 shrimp and a couple of slices of avocado.
6. Place a slice of crispy bacon on top of the avocado.
7. Close with the top half of the bun.
